Apple Raisin Pancakes

- 2 eggs, beaten
- 1 cup unsweetened applesauce
- 1 tsp cinnamon
- 2 tsp sugar
- 1 cup unbleached white flour
- ½ cup whole-wheat flour
- 2 tsp baking powder
- 2 tsp vanilla
- ½ cup golden raisins
Combine all ingredients until blended. Cook on a nonstick griddle over medium heat until both sides are browned, about 5-7 minutes.
